Mike Patey. Yes, its home built airplanes. Except... He design stuff on a CAD system, fabricates stuff on zillion dollar machining setups (think billet wing ribs), custom designs and fabricates most everything that isn't metal out of carbon fiber. Check out Draco and Scrappy.

I've been quite enjoying I Do Cars - it's run by a guy who has an engine recycling business. Most of it is blown engine teardowns, which are very interesting, but there's also some other car stuff as well. Best of all, it's not annoying, which seems to be an ever-increasing problem with YouTube content these days.

He's got a ratty cbr1000 powered Honda S600 with Miata suspension, and his current project is Tesla swapping a 50s Jag. Just got it driving.
I can't recall if it was mentioned before, but if you like old sports cars (particularly British ones) "This Week In Cars" has some good stuff.

I watch that also. He finds some interesting stuff. I liked the Studebaker clean out.

There's a bunch of these under similar names, like amazing things, amazing things, official, etc, youtube will suggest them in the sidebar. They're a good reality check on what actually is possible with very limited resources. Looks like it's out of Pakistan, but I've seen the same in SE Asia, I assume Eastern Europe, Africa, etc would also look very familiar.
This one is some sort of cast iron 3 cyl diesel, block has stripped head bolt threads and bad bores. Once you get to the final decking/boring/honing it looks not so different from any engine machine shop operation from the mid 50's. But getting to that point is pretty eye opening.
